In Ghost of Tsushima one of the early game optional bosses instantly surrenders once you draw your sword and take like three steps towards him.
My was the easiest boss was xehornat from Kingdom hearts 3 the main boss of the entire franchise. And it turns out my with xehornat was so easy on every difficulty xehornat was still easy to beat.

You forgot the Leader from the SNES game The Incredible Hulk. All you have to do is uppercut him once and you beat him. Not to mention he just stands there doing nothing.
Mysterio power is showing illusions, it’s easy to beat him when you realize that. 🎉

In Bully’s defense, Gary’s main attribute was his thinking, not his fighting. What’s he gloating about when you’re chasing him down? *How he manipulated others.* It makes sense in the game why he’s not as hard as the other bosses.

Toad Man. Say what you will about Spark Mandrill, but at least he requires a special weapon to be a joke. Toad Man can be stunlocked with the two-part “strategy” of “shoot the bad guy” and “don’t touch the ouchie.”
There are GIF images out there of Toad Man’s short hops.
It took me 25 years to even see what beating chill penguin with flame mammoths power looked like. I was so used to beating him normally and with the hadouken.

One of the easiest boss fights from recent memory is the big crab from Lego Pirates of the Caribbean. You just launch two coconuts at it and it’s dead.
Honorable Mentions:
*Toad Man – Mega Man 4
-As long as you keep shooting Toad Man, he’ll never use the rain flush. Just keep sliding under him after he jumps and shoot him.
*Giant Breadbugs – Pikmin 2
The only way they can win is if they drag your Pikmin into their dens while you’re carrying items back.
*Negative Man – Mother 3
-He more often than not wastes turns spouting nihilistic statements about how worthless he is. He has a lot of health but absurd defense. He has only one attack, but rarely uses it, and it only does 1 damage.
*Yu Yevon – Final Fantasy X
-Due to having permanent auto-life (which’ll restore you to full HP upon fainting), YOU CANNOT DIE DURING THIS FIGHT! Plus, there are plenty of ways to exploit the boss, from letting Yu Yevon damage himself with his own attacks, casting Zombie on him and letting the Pagodas kill him via healing, inflicting him with doom, or even using a Phoenix Down on him. Literally THE ONLY WAY YOU CAN LOSE is of you petrify your entire party yourself!
*Roger The Potted Ghost – Super Mario World 2: Yoshi’s Island
-All you have to do it walk right until you shove him off the edge. He has only 2 attacks: A push that only knocks you back and deals no damage, and an easy-to-avoid fireball spread. Yeah, those two Shy Guys in the back push back, but come on, do they even lift?
*Dr. Neo Cortex – Crash Bandicoot 2: Cortex Strikes Back
-Cortex NEVER attacks you, despite holding a laser gun, and will actually stop and wait for you if he gets too far ahead. What’s more, the meteors and mines don’t damage you, only slow you down. So the only way you can lose if Cortex manages to get away.
*Lambent Brumak – Gears of War 2
-The only way you can lose is if you don’t shoot or have the aim of a stormtrooper.
*The Leader – The Incredible Hulk (SNES)
-He stands perfectly still, never attacks you, and dies after ONE HIT! I think I found where Lucien from Fable 2 got his inspiration for his “boss fight.”
*Chaos 6 (As Big) – Sonic Adventure
-Aside from the one attack that Choas 6 has could possibly be a threat, you can end this fight before he has a chance to attack at all. All you have to do is aim your lure at Froggy, get a hit, and boom, the fights over. You don’t even have to reel it in, the fight ends right there and the cutscene takes care of the rest.
*Hot Mobile – Sonic 3 and Knuckles
-The only attack Robotnik uses is shooting bombs into the lava current flowing towards his Hot Mobile. The problem is that these bombs can be avoided simply by jumping to the next platform. Plus, the bombs automatically flow down to the Hot Mobile and damage it. I don’t think Robotnik thought this was a very well thought-up plan.
The stone boss in Sonic and knuckles is even easier. Just walk back to the quick sand and move when he tries to jump on you.
Also in wind Waker, pour enchanted water on the 1st boss he dies immediately.
Pretty sure in FFVIII if you use a Phoenix down on the undead boss he immediately dies.
A few more mentions:
1. The mean bean machine in Sonic Mania. Literally just a game of Tetris, and a very easy one.
2. Cortex in Crash 2. The only final boss I remember finishing in less than 10 seconds.
3. Navarro in Uncharted. His men put up quite a fight, but when it’s down to just him, he’s quite a pushover.
4. The rock titan in Kingdom Hearts 1. The final fight in the Hades cup, yet it’s the easiest fight in the game, because of how slow his attacks are.
5. Toasty in Spyro 1. Even for a first boss, he’s a total pushover. Doesn’t feel like a boss fight at all.
6. Jafar in Kingdom Hearts 2. An all powerful genie, yet he’s a total pushover, even on critical mode.
7. Helios in God of War 3. Does it even qualify as a boss fight? I blinked and it was over.
